
Made with gram flour, curd, and a mélange of spices, Gatte ki Sabzi is a traditional Rajasthani dish that goes well with roti and rice. While making this dish might sound a bit tedious, but when done right, it makes for a delectable treat that can be enjoyed for both lunch and dinner. Scroll down to read the detailed recipe.

1 cup gram flour, 1/2 tsp coriander seeds, 1/4 tsp carom seeds, 1/2 tsp turmeric, 1/4 tsp Kashmiri red chilli powder, salt to taste, 2 tbsp curd, 2 tbsp water, 2 tbsp oil, 1 tbsp cumin seeds, 1 tsp kasuri methi, 1 bay leaf, 1 tsp fennel seeds, 1 onion, 1 tsp asafoetida, 1 tsp ginger garlic paste, 1/4 tsp turmeric, 1 tsp kashmiri red chilli powder, 1 tsp coriander powder, 1/4 tsp cumin powder, 1 cup curd, salt to taste, 1/4 tsp garam masala powder, and 2 tbsp coriander leaves.

Grease a cake tin and set aside.

Mix gram flour, crushed coriander seeds, carom sedds, turmeric and spices in a bowl. Add curd and water to make a thick batter.

Pour it in the greased cake tin and steam in a pressure cooker or rice cooker for 20 mins.

Allow it to cool and cut into small cubes.

In a kadhai add oil, cumin seeds, bay leaf, fennel seeds and asafoetida. Allow it to crackle.

Add onion and ginger garlic paste. Mix well.

Add turmeric, cumin powder, coriander powder, garam masala, red chilli powder, salt and cook for 5 mins.

Add curd and mix well. Cook for 5 minutes and then add 1.5 cups of water. Bring it to a boil.

Add cubes of gram flour dumplings. Cook for 5-7 minutes. Garnish with coriander leaves and serve.
