250 g mushrooms, 2 large onions, 2 tomatoes, 1 tbsp ginger–garlic paste, 2 tbsp oil or butter, ½ tsp cumin seeds, ½ tsp turmeric, 1 tsp red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, salt to taste, 2–3 tbsp fresh cream, and 2 tbsp coriander leaves

First of all, clean and pat dry the mushrooms and cut into two equal halves.

Now, heat 1 tbsp oil in a pan and add mushrooms and sauté on high till they release water and turn golden.

Now, add the remaining oil in the pan along with cumin seeds. Let them crackle.

Add chopped onions and sauté till golden brown. Also, add ginger–garlic paste and cook for 2-4 minutes.

Add tomatoes, turmeric, chilli powder, coriander powder, and salt. Cook till oil separates.

Now, add the sautéed mushrooms and onion petals and cook for 4–5 minutes.

Top it with garam masala and cream and simmer for 2 minutes. Garnish with fresh coriander leaves and serve hot with roti, naan, or jeera rice.
