Now here is something that we guarantee is one-of-a-kind. This chewing cheese, is a food item found exclusively in Tibetan dominant areas. The churpi is typically made from solidified yogurt, which is then cut into small cubes and made to dry. It is used for various dishes, most notably with green vegetables, and one can also have delicious churpi achar to go with a meal. But the rock-hard cubes are ideally meant to be sucked and scraped like a candy. Be warned, for a beginner, it could take about an hour or more to finish it, but there is a trick that could help you savour it in a soft state. You can take the churpi and immerse it in a hot cup of tea. Then go on to drink the tea, until you reach the bottom, which is where your now softened churpi lies!
