How cold rice reduces starch?

When rice is cooked and then cooled, some of its starch transforms into resistant starch through a process called starch retrogradation. This type of starch is resistant to digestion, which slows the release of glucose into the bloodstream. As a result, eating cold or reheated rice can lead to lower post-meal blood sugar spikes compared to freshly cooked rice. In fact, a study with 15 healthy adults found that consuming white rice that had been cooked, refrigerated for 24 hours at 4°C, and then reheated significantly reduced blood sugar responses compared to freshly cooked rice.

However, it is important to note that proper storage of rice is necessary to avoid food poisoning risks linked to the bacteria Bacillus cereus, which can grow if rice is left at unsafe temperatures.
