Why to replace water with curd while kneading the dough

Roti is a staple of Indian households. From breakfast to dinner, roti or chapati fits into every meal and serves as a rich source of carbohydrates and other nutrients, making it an integral part of any meal. But, when it comes to making soft and puffed up rotis, many people fail and complain that their rotis often turn hard even after kneading the dough well. Have you ever thought about what goes wrong and how you can make rotis softer? In a recent Instagram reel, Mohamed Hussain, who runs a catering business in Chennai shared the secrets to making soft and puffed up rotis. Why does roti turn hard


According to Mohamed, roti turns hard because many of us don't know how to handle the moisture in the dough. He explains that once you understand how the moisture affects the dough and roti, making soft rotis becomes easy.

Add curd to the dough



According to Mohamed, we have always seen roti dough mixed with water, but have you seen roti dough mixed with curd? He suggests mixing curd in hot water and then adding it to the dough while kneading. This will lock the moisture in and make your rotis softer for long hours in the casserole.

Do not apply oil

Breaking the myth that coating the dough with oil makes the roti softer, Mohamed suggests not applying oil after kneading the dough. Rather, put a wet cloth on top and let it rest. This will relax the gluten and make the rotis softer and less chewy. Also, it is said that applying oil increases the fat ratio, which hinders the softness of rotis.

Use high flame


When you put the roti on the tawa, do not use a low flame. Mohamed suggests roasting rotis on a high flame on both sides. Only then will the chapati be soft, he claims. The rotis that are roasted slowly often turn into biscuits, and if you roast them on a high flame, they will be like a sponge. It is also said that when you cook roti for too long on heat, it becomes chewy and is often turns hard after a few hours even in casserole.

Use cloth over paper


When you store the roasted rotis, put them in a cloth and tie it and avoid paper wraps. He claims they will still be very soft, even the next day.
