Bollywood actress Neena Gupta is known for her series of homemade healthy recipes. In a recent reel on Instagram the actress shared an interesting recipe for high-protein and hydrating Lauki Handvo Cheela. In the video she explained that since she often fails at making the traditional-style handvo, she decided to give it a cheela twist. While explaining the recipe for the cheela, she said that this dish is a full meal because it contains lauki, dal, rice, and vegetables too. Scroll down to read the recipe and why it is perfect for summer months.What is Handvo?Traditionally, handvo is a savoury dish from Gujarat that refers to a rice and lentil cake made by fermenting the grains and mixing them with curd and veggies to make a satiating dish. It also uses a tempering of mustard seeds, sesame seeds, and curry leaves to enhance its flavor and is mostly enjoyed for breakfast, as an evening snack, or even as a light meal, often accompanied by green chutney, pickle, or yogurt.How to make Lauki Handvo CheelaIngredients: 1/2 cup grated lauki, 1 cup rice, ½ cup lal masoor, ¼ cup toor dal, ¼ cup hara moong, ½ cup yogurt, 1 tsp ginger, 1/4 cup grated carrot, 1 green chilli, 1/4 capsicum, 1/2 onion, salt to taste, 2 tbsp coriander leaves, 2 tbsp oil, 1 tbsp mustard seeds, 1 sprig curry leaves.Method: Soak rice and dals in water overnight. Next morning blend them into a smooth puree along with water and ginger. Transfer to a deep bowl, add salt, grated veggies, curd and spices and add water to adjust to a pouring consistency. Next, add the tempering of oil, mustard seeds and curry leaves and mix well. Heat a non-stick pan and grease it with oil. Pour the batter to form mini cheelas and cook on low-medium flame from both sides.
