Located at the corner of Constance Street and Third Street in New Orleans’ Garden District, Parasol’s doesn’t look like much from the outside, neither it is remarkable on the inside. A relative small space with a handful of tables, the restaurant nevertheless scores where it matters most—food. Specifically the po’boys. Though it calls itself a place for Cajun eats, it is the po-boys, especially the beef and the fried shrimp ones that are famous and utterly delectable. The shrimp is fried to perfection and generous portions are stuffed into a soft and crusty French baguette along with lettuce, tomatoes and mayo. The whole ensemble is crunchy, flavourful and quite satisfying.
