Winter is a special time in India. The beauty of it all can often to condensed to the winter special foods that are available across the country. If you are a foodie in search of India's greatest food adventures, winter is a perfect time to set out and hunt down the best of India food.

Kolkata for Nolen Gur
Bengal's kitchens give out the aroma of rice flour and nolen gur in cold winter mornings, which is undeniably nostalgic. It is the only kind of gur that Bengalis ever want, the date palm jaggery most coveted and cherished by folks all across the state of West Bengal. It is used in the making of sweets, especially Pithe or Pitha, made of rice flour and coconut. Then again, the roshogolla too gets an upgrade with this gur. Winter is really a good time for sweet lovers in the state.
Punjab for Sarson ka Saag
You have not really experienced winter in north India if you have not tried sarson ka saag with makki di roti. This delicious spinach preparation is best experienced in the state of Punjab, eaten during the winter months. This combination is a beloved one, and all you need to do is add a dollop of butter to take it to the next level. Finish it off with a tall glass of fresh lassi.
Varanasi for Malaiyo
Call it what you may, this winter treat is something to look forward to. People in Delhi call it Daulat ki Chaat, or even Nimish, the fact remains that this is a super hit dessert. Made of milk, fresh cream, saffron, dry fruits, and sugar, the dish will warm your heart in the cold winter months. Imagine eating a plat of this fluffy delight while sitting on the ghats of Varanasi during sunset.
Goa for Batica
A Christmas delight, this tastes special around December. The cake is made of semolina and coconut, and is ideally a pie, but that has changed of late. It is also known as Baath Cake, and is the best thing to end your Christmas meal with in Goa. Of course Christmas time is a time of celebration in Goa, and there are many dishes prepared during this time, this is certainly a highlight.
Sikkim/Ladakh for Thukpa
If you are going to Sikkim or Ladakh this winter, you have got to try Thukpa. The delightful noodle soup dish is full of nutrients, and is perfect for winter days. It is a super bowl full of great additions, alongside the humble noodle. You can have it vegetarian, or even add meats. Do not forget to finish the soup in the end.
Gujarat for Bajra Roti
A wonderful addition to winter diet in the state, this is essential winter food. Also known as Bajra Rotla, this type of bread is thick. Add a dollop of white butter on it to elevate its taste, but of course pair it with vegetables for a complete meal. You could eat it with baigan ka bharta, dal, or simply with garlic chutney.
Northern India for Gajar ka Halwa
You can call it India's answer to the western carrot cake, but only better. This delicious winter dessert is cooked with carrots, milk, ghee, dry fruits, and other ingredients. A staple in Indian kitchens, the wonder of Gajar ka Halwa is only understood by those who grew up on it. A delightful dish, end your dinner on a high note with this.
Rajasthan for Gond ke Ladoo
When in Rajasthan during the winter months, the cold certainly gets to you. This is the time to eat Gond ke Ladoo. A delicious sweet dish that is in fact very nutritious, and perfect for winter days. Gond is basically edible gum, full of iron and protein, and is prepared with dry fruits, and wheat, among other ingredients.
