The locals in Rajasthan have made a praiseworthy use of the available resources to prepare their daily bread and butter even though Rajasthan is mostly a dry and arid state. Dal Bati
The food scene of Rajasthan is synonymous with Dal and Bati. The bati is made by made round balls of wheat flour and baking them in cow dung cakes or hot coals. The dal is especially made to enhance its flavour. One the bati is baked to perfection; it is broken a bit and then soaked in loads of melted unsalted butter.
Choorma Ladoo
A typical feast of Dal Bati is followed by having the delish Choorma Ladoos. These sweet balls of ghee, semolina, sugar and dried fruits add the touch of completion to the meal.
Pyaaz ki kachauri
Almost every sweets and confectionary shop in Rajasthan sells pyaaz ki kachauri which is made by filling wheat or refined flour bread with a filling of onion, potato and spices, and then deep frying it in hot oil. For many tourists and locals in Rajasthan, this serves well as a breakfast or an evening snack.
Gujiya
Almost the whole of North India swears by Gujiya, and no Holi celebration is complete without digging into this delicious snack. It is believed that these sweet, khoya-filled dumplings first originated in Rajasthan. Gujiya comes in saffron flavour as well.
Aam ki launji
Popular mainly during the summer season, this tangy pickle made from raw mangoes, a bit of fennel (saunf) and nigella (kalonji) goes well with the regular food relished by the locals in Rajasthan.
Badam Halwa
Made with loads of almonds, sugar, ghee, saffron and cardamom, Badam Halwa is a treat which can light up a dull day! Sample it at the local confectioner in Rajasthan and you are sure to turn a fan.
Gatte ka Pulao
There is a dish called Gatte ki Curry and then there is Gatte ka Pulao made by steamed rice with spices and pieces of chickpea flour. It is also called Ram Pulao. Find it at any authentic Rajasthani restaurant.
Rajasthani Kadhi
Kadhi has been a part of the staple diet in Rajasthan since ages, and given its unique taste, it has all the reasons to be so.
Boondo Raita
The sugary and salty Boondo Raita is made by mixing whipped yoghurt with boondo namkeen and a couple of spices. It is a much favoured accompaniment to lunch and dinner meals in a typical Rajasthani home.
Ghevar
A melt-in-mouth dessert native to Rajasthan, Ghevar has found numerous lovers in the entire North India. Loved by the royalty, Ghevar is a dessert made by almost every sweets shop in the Indian state.
