What is Bore Baasi?

Bore Baasi refers to cooked fermented rice, a cooling and comforting rice preparation consumed in summer months in eastern states. It is often considered as poor man’s food, as it is mostly consumed by labourers and farmers. On Labour Day, Chhattisgarh Chief Minister Bhupesh Baghel appealed to the citizens via a video message to consume 'Bore Baasi' mentioning that it is good for health. (Image: istock and TOI.com)

​CM’s message

As per a TOI report, in the video message he said that this food is the support system for hardworking labourers and in order to acknowledge their efforts, let's eat what they relish. According to his video message, labourers and farmers eat Bore Baasi for lunch or before leaving home for work in Chhattisgarh and we should pay respect to them on labourers' day by consuming Bore Baasi. CM along with his cabinet relished Bore Baasi and even security forces deployed in anti-naxal operations joined the celebration and posted pictures of having Bore Baasi in the remote forest areas. ​How to make Bore Baasi

1. Soak the cooked rice in water, preferably in an earthen pot and leave it overnight.

2. Next, take soaked rice along with water in a serving bowl or plate, add tomato chutney, green chilli, and onion chunks. Sprinkle salt and raw mustard oil and mix.

3. Your healthy and delicious bore baasi is ready.

4. For making tomato chutney, take 2 charred tomatoes and crush them using a mortar and pestle along with red chilli and garlic pods. Season the chutney with salt, roasted cumin powder, and fresh coriander leaves.

As per experts, it is rich in vitamins keeps stomach cool in summer, prevent wastage of leftover rice and also helps in smooth digestion. We in Tamil Nadu eat such rice, but without onions, Greenhills and chutney. We mostly eat it as curd rice
