Mushrooms are said to be nutrient-rich superfoods packed with surprising health benefits. They are low in calories and fat, and are a great source of B vitamins, selenium, potassium, and powerful antioxidants that support immunity and fight inflammation. While we often hear about button, shiitake, and other varieties of mushrooms, which are quite affordable and come for a few hundreds, there exists a rare variety of mushroom called Himalayan Gold that costs a whopping Rs 1 kg per kilogram. Scroll down to know why it is so expensive.

What is Himalayan Gold

Called cordyceps militaris, this new breed of mushroom has always been part of Chinese and Tibetan herbal medicines and is now being successfully cultivated by Gujarat scientists at Gujarat Institute of Desert Ecology (GUIDE) in Kutch. These mushrooms are cultivated in a controlled environment in a laboratory in glass jars and as per reports, it takes 90 days to yield 350 gms of this mushroom.

How to use Himalayan Gold at home

This nutritious mushroom can be used in many ways.
Herbal teas and infusions: One can simply dry cordyceps and steep a few chunks in hot water to make a light, earthy tea. Add lemon and honey to improve the taste.
Soups and broths: It pairs well with soups and slow-cooked broths. Simply combine it with chicken, vegetables, and mild spices to make a flavourful dish.

Stir-fries: One can also make stir-fries. Simply toss fresh or rehydrated cordyceps with vegetables, tofu, or meats. Enjoy!
Rice and noodle dishes: It can also be mixed into fried rice, pulao, or noodle preparations, enhancing both visual appeal and nutritional value.
