Love for desi Indian chai

If you are in Toronto and done with local Butter Tart and Lobster Rolls and missing the Indian Masala Chai, you don’t need to panic, because, there is a couple who is selling freshly blend Masala Chai in their local cafe called ‘Chaiwala’. For Eamon & Rebecca, it all started in Australia, when they learned that chai didn’t have to be Starbucks syrup and that it was (and should always be) freshly prepared from whole spices, tea leaves and ginger root. They met a guy named George Manousakis - a cafe owner who blended masala chai over 11 years of experimenting with the drink.

How did it begin?

They packed backpacks and came to Nepal and India, where they soaked themselves in the aroma of Indian chai. They tasted local chai at ‘tapri’ (tea stalls) and within no time they realised that each one had their own secret spice to perfect chai recipe. It was then they realized that chai in India is not just a beverage, but a ritual. According to the young couple, quickly chai became an important part of their daily life.

After returning to Toronto, Eamon began working as a barista at a local Toronto cafe. One fine day, she went to her mom’s kitchen with a bunch of spices and starting cracking, blending and taste testing. That’s when, Chaiwala Chai was born.
