One-bowl healthy Indian dinners that can be prepared in 10 minutes!

Easy one-pot Indian recipes

After a long day at work-whether working from home or having resumed office and the unavoidable household chores and daily cooking, dinner seems a daunting task and most of us end up either skipping it or eating the leftovers from the day. But dinner has to be light and healthy and at a time when we need our immunity to be the strongest, it has to be balanced and well planned. Here are some easy dinner options that can be prepared in a bowl without dirtying many utensils and can be consumed without guilt.

Protein Packed Bhel

It is a variation of the quintessential Bihari Chat Mudhi or Bengali Jhalmudhi and can be a good dinner substitute. Take a bowl and add 2 cups bhel. Add one tbsp mustard oil, 1 tsp kasundi or Dijon mustard, ½ cup soaked black gram, ¼ cup each roasted groundnut and chopped onions,2 finely chopped green chillies, ¼ cup finely chopped cucumber and tomatoes and salt, chat masala and red chilli powder as per your taste. Toss well and enjoy with a healthy shake of your choice.

Rice salad

Take leftover white or brown rice from the morning or previous day. Add finely chopped onions, green chillies, tomatoes and cucumber, roasted almonds and cashews, salt and pepper, juice of half a lemon and mix well. Your dinner is ready!

Chapati Mishmash

Tear the chaptis and leave them on a pan on low flame till they turn crisp, you can alternately microwave them too. Crumble them in a bowl. Add oregano, salt, pepper, mustard sauce tomato ketchup, chopped onions and tomatoes, any leftover boiled veggies from the lunch, grated cheese, red chilli flakes and mix well. Poha and Sattu Bowl

This bowl has a quintessential earthly taste and you are going to love it for sure. Soak poha in a little milk for 5 minutes. Transfer Poha to a bowl. Add finely chopped onions and green chillies, chat masala, seasonings, ½ tsp masala from any pickle, roasted peanuts and 1 tsp sattu and mix well. Sprinkle some milk if it appears too dry. Have it with a glass of fresh lime water.

Cottage-Cheese Rice Bowl

Take a bowl and add cooked rice. Add salt and pepper to taste. In a pan add 1 tsp butter and one finely chopped onion and green chilli. Once pink add chopped panner pieces and sprinkle some garam masala, seasonings and tomato ketchup. Mix well and transfer to the rice bowl. Mix and serve topped with coriander leaves.
