Jau, or barley, is a cereal grain that has been a part of the Indian diet for centuries. It is known for its earthy flavor and rich nutritional values, as it is rich in dietary fiber, especially beta-glucan, which is good for the heart, digestion, and blood sugar as well. It is also a rich source of protein, iron, magnesium, and antioxidants. In India, it is mostly consumed in the form of flour for making roti or khichdi or as a concoction.
