How to make the perfect bowl of Thukpa at home this monsoon

Ingredients required

One small onion, one small carrot, ¼ cup sliced capsicum, ¼ cup chopped beans, ¼ cup shredded cabbage, 1 tbsp chopped ginger, 1 tbsp chopped garlic, 1 green chilli, 1 tbsp soy sauce, ¼ tsp black pepper, salt to taste, 1 tsp vinegar, 1 small tomato or 1 tbsp tomato puree, 100–120 grams noodles, 2 cups water or light vegetable stock, 1 tbsp oil, fresh coriander or spring onions for garnish, 1 tsp chilli oil (optional).

How to make it

Start by heating oil in a large pan. Add garlic, ginger, and green chillies, and let them sizzle until fragrant. Add the chopped veggies and stir-fry them lightly so they stay a little crunchy. Pour in water or vegetable stock and bring it to a boil. Mix in soy sauce, salt, pepper, and a bit of vinegar or lime juice. Let it simmer so the flavours blend well. In another pot, cook your noodles until just done. Add them to the broth just before serving to keep them from turning soft. Garnish with coriander, spring onion, or a drizzle of chilli oil, and serve hot.
