How to make Kerala-Style Appam and Chicken Stew for lunch at home

Right way to make Appam And Chicken Stew

Appam and Chicken Stew makes for a light yet nutritious lunch combination. Made with chicken chunks, coconut milk, and mild spices and served with thin crepe-like rice cakes, this is an easy-to-make lunch delicacy that is a must try. Scroll down to read the full recipe.

Ingredients

For Stew: 500 gms chicken, 4 tbsp coconut oil, 2 onions, 1 red chilli, 2 green chilli, 1 tbsp ginger garlic paste, 2 tomatoes, 2 potatoes, 1 cup coconut milk, salt to taste, black pepper to taste, and 1 tbsp lemon juice
For Appam: 1 cup rice, 4 tbsp coconut, 1/2 tsp baking soda, 1 tbsp cooked rice, salt to taste, and 1 tsp sugar

Step 1


First of all, heat coconut oil in a pan, and saute onions, red chilli, green chilli and ginger garlic paste for a minute.

Once done, add the washed chicken pieces and fry for 3-5 minutes.

Next, add the diced tomatoes, potatoes, and coconut milk. Bring it to a boil.

Add salt, pepper and water to adjust the consistency. Cover and simmer for 40 minutes.

Once done, top it with coriander leaves and lemon juice.

For appam, soak rice overnight and then next morning, blend it along with coconut and cooked rice into a smooth puree.

Add soda, salt, sugar, and water to adjust the consistency.

Heat an appam kadhai, pour a ladleful of the batter, spread to form an appam, cover, and cook for 1 minute.

Serve hot with chicken stew and enjoy!
