A sweet festival

Diwali is a time for celebrations and festivities, which come in the form of lights, colours, oil lamps, and not to mention a whole lot of delicious food. Among the food, mithais steal the spotlight for being the most festive and sought after delicacy, with the taste, smell, and even the sound of the word mithai resonating within the four metaphorical walls of our country. ​Kaju ka jadu

India is home to a lot of indigenous sweets, but undoubtedly one of the most popular mithais is Kaju Katli or Kaju Ki Barfi. This diamond shaped delight has won, or rather stolen many a heart with its exquisite taste and texture, and its rich cashew flavour. Made with cashews, milk, and sugar, this white slice of goodness is a treat not just for those with a sweet tooth, but for all Indians alike. ​Step 1

Grind cashews into a smooth powder, and add a little water to make a paste. Heat the paste in a shallow pan on medium flame, then add some water and sugar, and stir continuously until the sugar is completely dissolved. (Image: Instagram/velle_foodies)

Bring the syrup to a boil, add cashew powder, and stir the mixture for 5-10 minutes, or until it starts to thicken. You can add a pinch of cardamom powder to give a more traditional flavour. (Image: Instagram/theforkeddiaries)

Transfer the paste to a plate and let it cool slightly. Once cooled, knead the mixture and flatten the dough with a rolling pin. Grease a plate with ghee and transfer the cashew dough onto the plate. (Image: Instagram/foodies._.corner)
