Gobhi Matar Pulao Recipe
This one-pot meal is for all the rice lovers. Made with soaked rice, green peas, gobhi and spices, this makes for a comforting lunch meal that one can enjoy with raita or curd, and pickle. Scroll down to read the detailed recipe.
Ingredients
1 cup basmati rice, 2 cups gobhi, ¾ cup green peas, 1 medium onion, 1–2 green chillies, 1 tsp ginger-garlic paste, 2 tbsp oil or ghee, 1 bay leaf, 1-inch cinnamon stick, 3–4 cloves, 3–4 green cardamoms, ½ tsp cumin seeds, 1/2 tsp turmeric powder, ¾–1 tsp red chilli powder, salt to taste, 2 cups water, 1 tbsp chopped coriander leaves, ½ tsp garam masala, and 1 tsp lemon juice
Step 1
Wash basmati rice and soak for 20 minutes.
Step 2
Heat 1 tbsp oil in a pan and lightly sauté cauliflower florets for 3–4 minutes until slightly golden.
Step 3
Heat a pressure cooker, add ghee, cumin and whole spices. Let them splutter and turn aromatic.
Step 4
Add sliced onions and sauté until light golden. Also, add ginger-garlic paste and green chillies and cook for a minute.
Step 5
Add peas, sautéed gobhi, turmeric, red chilli powder, and salt. Mix well.
Step 6
Add the soaked rice and gently sauté for 1 minute. Add water and pressure cook for 2 whistles.
Step 7
Once done, add garam masala, lemon juice, and coriander leaves. Serve hot with curd and pickle.
