How to make classic Chocolate cake
To make this easy chocolate cake, take a large bowl, combine 1¼ cup sugar, ¾ cup oil, ½ cup buttermilk, and 1 tsp vanilla extract; whisk well until the sugar dissolves completely.
Next, take a sieve and sift together 2 cups of all-purpose flour, ½ cup cocoa powder, 1 tsp baking powder, ¼ tsp baking soda, ¼ tsp salt, and 1 tsp coffee powder into the wet mixture.
Gently fold the dry ingredients into the wet, adding about ¼ cup water if needed to make a smooth batter without lumps.
Meanwhile, preheat your pressure cooker by adding 2 cups of salt to its base and heating it on medium with the lid closed but without the gasket and whistle for 5-10 minutes to create an oven-like environment.
Grease and line a 7-inch cake mold with butter paper, pour the batter in, and tap gently to remove air bubbles; place the mold in the preheated cooker.
Cover the cooker with a lid (no whistle) and cook the cake on medium heat for 45 minutes.
Check doneness by inserting a toothpick, cool the cake completely before removing it from the mold, and optionally frost or serve as desired.
Note:
To make ganache for the cake, just whisk chocolate and a pinch of salt and butter using the double boiler method.
