Appetizing salad recipes for Christmas

With just one day to go for Christmas, the preparations for the celebrations are at full swing. The traditional Christmas dinner is an intrinsic part of the festival, in which friends and family gather to not only celebrate Christmas but also welcome the new year. A grand feast which includes snacks, main dishes, desserts and drinks is laid out. If you too are planning to host a Christmas dinner, here are some delicious salad recipes which will instantly amp up the meal.

​Carrot and Lettuce with Yogurt Dressing

Firstly saute a cup of sliced carrots in a tbsp of butter for just a few minutes and set it aside. Now prepare the yogurt dressing by blending the following ingredients in a blender- ½ cup buttermilk, ½ cup mayonnaise, ½ cup yogurt, 1 tbsp lemon juice, 4-5 diced garlic cloves, 1 tsp mustard seeds, 2 tbsp chopped coriander, salt and pepper as per taste. Blend to form a smooth paste.

Now lay some lettuce leaves in a bowl, add sauteed carrots and dress the salad using the yogurt mixture. Your delicious and creamy salad is ready to be served.

​Roasted Sweet Potato with Chicken

Firstly cut sweet potatoes into circular discs and roast them in an oven or a non-stick pan. Now take a bowl and whisk together ¼ cup rice vinegar, 2 tbsp sesame oil, 1 tbsp grated ginger and some pepper. Now take a bowl, add sliced roasted chicken-breast halves (pre-cooked) along with roasted sweet potatoes. Add the dressing and give a gentle mix. Garnish with some sesame seeds and enjoy.

​Citrus Fruit Salad

Take a bowl, squeeze out 3-4 tbsp of lime juice. Add 1 tbsp honey and 1 tsp poppy seeds in it and whisk well. Now take a separate bowl and add orange and grapefruit slices. Add honey dressing, sprinkle some lime zest and garnish with a few pomegranate seeds. You can savour the salad with a dollop of yogurt for added flavours.

​Shaved Carrot and Radish

In a bowl whisk together 2 tbsp orange juice, 2 tbsp lemon juice, 1 tbsp honey, 1 tbsp olive oil, a pinch of salt and keep it aside. Now shave your 2 carrots and 2 radishes in a bowl. You can add some beetroot and purple cabbage shavings as well to add some more colour to your salad bowl. Add pepper as per taste and give a light mix to all shavings. Add the orange-lemon juice dressing, garnish with some mint leaves and serve.

​Chickpeas with Veggies

Boil a cup of chickpeas and drain the excess water. Now take a bowl, add chopped onions, cucumber, capsicum, tomatoes and any other veggie you like. Mix 2 tbsp mayonnaise, 2 tbsp chipotle sauce and 2 tbsp honey with the veggies. Add salt and black pepper as per taste and give a good mix. Lastly, add boiled chickpeas, mix well and serve the delish salad.
