Common biryani mistakes

Biryani is not just a dish, it's an emotion, cooked in layers with love, spices, rice, and meat, with lots of patience and calculation. And one small mistake or carelessness can destroy the whole experience. Patience, precision and respect for technique, makes biryani delectable. And keeping that in mind, here we have discussed 9 common mistakes one should avoid while making biryani at home.

2/10

Mistake 1: Overcooking the rice

When it comes to cooking rice for biryani, it shouldn't be fully cooked before layering. It should be 70–80% cooked before layering, as fully cooked rice turns mushy or might break during dum, resulting in soggy biryani.

3/10

Mistake 2: Using wrong rice

For biryani, short grain or broken rice are not apt. It is best to use long grain aged basmati for biryani to get the perfect-looking dish.

4/10

Mistake 3: Skipping rice soaking

Yes, soaking rice for biryani is necessary. Not soaking rice leads to uneven cooking and broken grains too, while soaked ones result in fluffier and longer grains.

5/10

Mistake 4: Overpowering with spices

Biryani is not just about spices. It is about creating the right balance. Hence, adding too many spices might overpower the dish and spoil it. So, be very calculative.

6/10

Mistake 5: Ignoring proper marination

Marination of meat and veggies is crucial. Under-marinated meat lacks flavour and depth. Hence, marinating with curd and spices for 2-4 hours is necessary.

7/10

Mistake 6: Using too little fat

When it comes to a perfect biryani, use of fat is necessary. Skimping on ghee or oil results in dry rice and dull flavours. Hence, use them right and in abundance.

8/10

Mistake 7: Poor layering technique

Preparing biryani calls for patience and dumping everything together ruins biryani’s identity. Hence, it is important to layer rice, meat, herbs, fried onion, and saffron water nicely and evenly, to ensure flavour in every bite.

9/10

Mistake 8: Cooking on high flame

Dum cooking is all about slow heat. Hence, the logic of using high flame on dum cooking is not required.

10/10

Mistake 9: Not letting the biryani rest

Once the biryani is ready, it is important to let it rest, so that the flavours are nicely locked till the bottom of the vessel.
