The season of carrots is here, but it often happens that kids don't find this root vegetable a tempting deal. And if you are also struggling with this, then here we have got some interesting ways to make carrots a school-tiffin-friendly item. As per Sadhguru, carrots are packed with essential nutrients, including enzymes, vitamins, and minerals—that too in an easily digestible and assimilable form. They are a good source of fiber and contain vitamin B1, B2, B6, folic acid, vitamin C, vitamin K, biotin, potassium, and thiamine. Carrots are an excellent source of beta-carotene, thus improving eyesight, preventing cell degeneration, and slowing down the aging process. According to a study published by PMC, carrot consumption improves lipid profiles by decreasing circulating triglycerides and oxidative stress markers. The high content of carotenoids and fibers contained in carrots acts as an antioxidant defense enhancer. To make these mini discs of flour, combine mashed potatoes and grated carrots, along with spices, shape them into cutlets, dunk in flour slurry and coat well with bread crumbs and shallow-fry or deep-fry.
