Considered as the original pizza, it dates way back to the 18th century in Naples, Italy. “During this time, the poorer citizens of this seaside city frequently purchased food that was cheap and could be eaten quickly. ​Chicago Pizza

It is commonly referred to as deep-dish pizza, which got its name from the city it was invented in. Chef Shantanu informs, “During the early 1900’s, Italian immigrants in the windy city were searching for something similar to Neapolitan pizza . That is when they created a pizza with a thick crust that had raised edges, similar to a pie, and ingredients in reverse, with slices of mozzarella lining the dough followed by meat, vegetables, and then topped with a can of crushed tomatoes. This original creation led Ike Sewell to create the now famous chain restaurant, Pizzeria Uno.” (Image: istock)

​Sicilian Pizza

Also known as 'Sfincione', this thick-cut pizza made with pillowy dough has a crunchy crust and robust tomato sauce. Chef Shantanu says, "This square-cut pizza is served with or without the cheese. ​California Pizza

Chef Ed Ladou innovated California pizza or gourmet pizza in the late 1970s and used mustard, ricotta, pate, and red pepper to make a unique pizza recipe. The pizza was served to Wolfgang Puck and impressed by the chef's innovative pie; Puck invited him to be the head pizza chef at his restaurant.
