We all have those days. The fridge looks accusingly empty, your energy is somewhere under the couch, and yet you want something more than instant noodles. It’s the kind of hunger that asks for comfort without the labour of a full kitchen session. The trick isn’t to cook harder, but to cook smarter —to take what you already have and coax it into something comforting with minimal effort. Here are five recipes that prove lazy cooking can still taste like a small victory.

Cheesy garlic bread in a pan

The oven version is wonderful, sure, but when laziness hits, a pan does the job. Take slices of bread, spread on butter mashed with garlic (powder also works just fine), sprinkle over any cheese you have. Cover the pan and let the bread toast slowly until the bottom crisps and the cheese melts into gooey strands. It smells like a café, but barely requires any effort.

One-pot tomato pasta

No separate sauce, no mountain of dishes. Just toss pasta into a pot with salted water, let it bubble, then add chopped tomatoes or a spoon of puree, a drizzle of oil and a pinch of the herbs you keep nearby. Stir till the pasta is tender and the starch from the water clings to the tomatoes, creating a silky sauce all on its own. Grate cheese towards the end if you like, or eat it straight; it’s tasty, filling, and leaves you with just one pot to wash.

Masala omelette roll

Eggs are gold for lazy days. Beat two with salt, chilli, onion, tomato and coriander. Fry into an omelette, slide it onto a roti or tortilla, roll it up, and you’re done. A squeeze of ketchup or green chutney makes it taste like proper street food. Ten minutes, tops. It’s breakfast, lunch or midnight snack, depending on how your day’s going.

Yesterday’s rice is today’s saviour. Heat a spoon of oil, toss some garlic with just a splash of soy sauce, tip in the rice and stir till it warms and picks up flavour. You could drop in frozen peas, a handful of leftover vegetables, or even some paneer if you have it at home. Add some amchur towards the end for tang, and suddenly dinner feels deliberate instead of recycled. It’s the best kind of lazy trick - fast, filling, and zero waste.

Not every meal needs fire. Spoon chilled yoghurt into a bowl, drizzle with honey, and slice in whatever fruit is within reach, such as banana, apple, or even frozen berries.
