Happy Teachers' Day!

The role of teachers in our lives is beyond words and definitions. They not only teach us the basics of survival but also shape us to stand where are at present. When it comes to celebrating Teachers' Day, we often surprise them with inspirational quotes, pen, diary, watch and greeting cards. For a change, this year we asked the new-age chefs to remember their guru and dedicate a dish to them along with a heartfelt message. Here’s what they had to say:

Chef Kasi Viswanathan, Food & Beverage Director, Radisson Blu Atria, Bengaluru

One teacher in life who taught/inspired for cooking: Chef Max Massimiliano
One message for that teacher/chef: He is my professional mentor who had inspired my passion towards a different and a unique destination. I dedicate my professional success to Chef Max who I happily give credit for my success.
A dish dedicated to that teacher/chef: I would like to dedicate Oven-Baked Hamour Fish that is made with sweated spinach and caramelized onion with white wine vinegar and green peppercorn sauce. The reason I want to dedicate this is because he is an Italian national and brought up in the Mediterranean sea belt and a fond lover of seafood.

Chef Anuj Wadhawan, Executive Chef, Roseate House

One teacher in life who taught/inspired for cooking: Chef Vikram Khatri, Chef Sabyasachi Gorai and Chef Sujan Sarkar
One message for that teacher/chef: Though I have been asked to name only one person, but I would like to mention three because they are the three pillars of my success journey till date. I don’t think I would have been here without their guidance and nuances of cooking, which surely reflects in my cooking as well.
A dish dedicated to that teacher/chef: Crispy Rice Cake with Tuna Tartar for Chef Vikram Khatri, Confi Salmon with Tobico for Chef Sabyasachi Gorai and Pan-seared Duck with Apple Cinnamon Puree, Beetroot Puree, Spiced Pumpkin Puree, and Mint & Green Peas Puree for Chef Sujan Sarkar.

Chef Meghna, Founder, Meghna's Food Magic

One teacher in life who taught/inspired for cooking: Chef Nigella Lawson

One message for that teacher/chef: It’s interesting that we always remember teachers who taught us cooking and baking. On this teacher’s day, I reached out to my inspiration- who I have never met- the celebrity chef Nigela Lawson. I became a chef because it was her screen presence and cooking style that inspired me. I just love the way she connects with you and genuinely tries to teach you. She makes cooking a joyful experience; not just cooking but even watching her is so soothing.

A dish dedicated to that teacher/chef: This Teachers' Day, instead of presenting her a bouquet, I would like to present Rose Pistachio Cake to her, as a token of Guru Dakshina.

One teacher in life who taught/inspired for cooking: Ms Maya Rajan
One message for that teacher/chef: I want to thank her for always being open to sharing knowledge and expertise and encouraging me to go out of my comfort zone to try out unique recipes.
A dish dedicated to that teacher/chef and why: I want to dedicate ‘Aamrish Puri’ as this classic dish always brings nostalgia and we had sweet memories during my learning years. Also during the time when she mentored me, our student-mentor relationship was just as unique as ‘Aamrish Puri’ and we had the perfect creative collaboration.

Chef Gaurav Chawla, Corporate Executive Chef , First Fiddle Restaurants

One teacher in life who taught/inspired for cooking: The best teacher in life who inspired me for cooking would certainly be my mother.
One message for that teacher/chef: I think cooking came to me from her and I can never thank her enough for being my guiding force to reach where I am today. For me, starting my day with her blessing is important, because that’s my source of creativity and energy.
A dish dedicated to that teacher/chef and why: I would like to dedicate a dish called “Oh My Gourd’. It is an amalgamation of lacto fermented karela , karela khurchan, kefir gourd gastrique , amaranth & air dried coconut. This has the bitterness of gourd, so to balance it I add lacto fermented for 5 days to get the citrus fermented flavour which is good for gut too. Along with it I serve the reduction of karela fermented liquid & khurchan stuffed in karela to give that crisp texture. She loves this innovation of mine.
