Slow cooking is a method that involves cooking food over a prolonged period of time on slow fire. It is said to lock the digestive juices inside the food and also prevents nutritients from escaping. While in the west, this cooking process is often employed for convenience where you put your ingredients for dinner in the crock pot and go to work and when you come back home, you find your food ready, in India it is done more for taste.
